Jalapeño Cashew Sauce
One of my favorite dishes to have is a grain bowl. I love packing them with tons of vegetables, both roasted and raw. I will be sharing a grain bowl with you guys soon, but first I wanted to give you this sauce/dressing to make. I always top my bowls with some sort of dressing, usually a tahini based dressing and maybe some "cheese" sauce. This time, I thought I would try something a little bit different. There's still tahini in it, but that's not my main ingredient.

Jalapeño Cashew Sauce
Ingredients:
1/2 cup cashews, soaked
1/2 lemon, juiced
1 jalapeño
1/2 cup + 2 tbs water
2 tbs tahini
garlic
sea salt
Directions:
Boil water and pour over cashews, let soak for 30 minutes (probably not necessary to soak but I just decided to soak mine to make it creamier).
Once those are done soaking, drain, and pour into a blender. Then add the juice from half of a lemon, jalapeño without the seeds, water, and tahini. Blend on high until well combined. Add more water if you wan
I would taste it now and then slowly add in the garlic and salt to taste. I did about 1 tsp of garlic powder and 1/2 tsp of sea salt.
